            Deerfield Ranch Cabernet Sauvignon Reserve “Los Chamizal” Sonoma Valley 2005 $48

88% Cabernet Sauvignon, 9% Merlot, 2% Cabernet Franc,

1% Malbec.

 

Composed, embracing and evenly blanketing the palate, a staunch, benchland Cabernet that clutches and undresses firm, polished layers of mineralized black fruit underlined by a sweeping streak of raspberry mocha cafe and black cola.  Clearly displaying the Basaltic terroir and bold, black minerality of Shocken Hill; it is a varietally correct wine, deeply layered, with classic tannins, modern-ripe acid levels, a medium-long finish and a medium-heavy texture.  It has flavors of huckleberry tree fruit, acai hard candy, ripe black plum, elderberry, black cola, red currant syrup, framboise liqueur, mocha coffee, fig bar,  violets, black mineral, fine black pepper, fennel and gravel.

Serving: Decant for 15 minutes and serve now or cellar from 2012 to 2015.  Best served alone or with heavier, grilled cuisine.

Food recommendations:  Filet Mignon, Stuffed Mushrooms, Meatloaf, Mexican Skirt Steak, Wood Fired Ribeye Steak, Blackend Ribs, Bison Burger, Mongolian Beef and Beef Stew.  

Consumer Type: For those who enjoy modern Bordeaux Blends and Cabernets with equal amounts of mineral and fruit.
