Deerfield Ranch Winery, Estate Syrah,
Sonoma Valley AVA, 2006 $28
A rare, classically balanced North Bay Syrah, with tense, dark flavors and firm extraction. It is tightly layered with flavors of cassis, graphite, black plum, anise seed, sassafras, black olives, tamarind, truffle oil and briar. With a lean, gripping structure, a dry finish and dark spice, this red forwardly suggest that it is a classic Syrah that is best paired with a full meal.
Serving: Best served decanted for 10 to 15 minutes when young; it can be cellared for 5 to 7 years for future textural refinement and to open up more of the spice cabinet flavors behind the dark fruit.
Food recommendations: Lamb Shank, Pork Roast, Beef Stew, Skirt Steak and Gyros.
