“Los Chamizal” Sonoma Valley, 2004 $48

75% Cabernet Sauvignon, 12% Merlot, 10% Cabernet Franc,

2% Malbec, 1% Petite Verdot

 

 

Massive, fully assembled and deep; a full bodied, American-sized Bordeaux blend that is well constructed and varietally proportioned.  A concentrated wine with soft, black tannins, integrated acid and layers of ripe fruit; polished flavors of ripe black currants, black Pluot plums, tamarind, red currant syrup, Allgold raspberry, dried blueberries, molasses syrup, shortbread, blackening spices, vanilla and sandalwood.

Serving: Decant for 30 minutes for the varietals to come together.  Serve now or cellar from 2012 to 2015.  Best served without food or with heavier fire roasted cuisine.

Food recommendations:  Ribeye Steak, Braised Short Ribs, Bison Burger, Mongolian Beef, Lamb Biryani and Beef Stew.  

Consumer Type: For those who enjoy rich, full bodied Cabernets and richer Bordeaux-American style blends.
